Sardine Pasta Recipe

  • Author: Miya
  • Total Time: 25 minutes

Ingredients

Scale

Here’s what you’ll need to make this tasty Sardine Pasta:

  • 200g (7 oz) pasta (spaghetti, linguine, or penne work best)
  • 1 can (4 oz) sardines in olive oil, drained (reserve some oil for cooking)
  • 2 cloves garlic, finely chopped
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons olive oil (reserved from the sardines or extra)
  • 1 tablespoon capers, drained and chopped (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 lemon (for zest and juice)
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Ingredient Highlights

  • Sardines: Sardines are a highly nutritious fish, packed with protein, omega-3 fatty acids, calcium, and other essential nutrients. They’re an excellent choice for a healthy and affordable seafood meal.
  • Pasta: The pasta serves as the perfect base to soak up the sardine-flavored olive oil, providing a hearty and satisfying texture to the dish.
  • Garlic: Garlic adds a fragrant, savory component to the dish that blends beautifully with the sardines and olive oil.
  • Red Pepper Flakes: A pinch of red pepper flakes adds a slight heat to the dish, enhancing the flavors and giving it an extra kick.
  • Lemon: Lemon zest and juice provide a refreshing, zesty brightness that balances the richness of the sardines and olive oil.

Instructions

Boil the Pasta:

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, usually about 9-11 minutes, until al dente. Once cooked, reserve about 1/2 cup of pasta water, then drain the pasta and set aside.

  2. Do Not Overcook the Pasta: Be sure not to overcook the pasta. It should still have a slight bite to it, as it will continue to cook slightly in the pan with the sardines.

Prepare the Sardine Sauce:

  1. Sauté the Garlic: In a large skillet, heat 2 tablespoons of olive oil (or use some of the oil from the sardines) over medium heat. Add the chopped garlic and sauté for 1-2 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.

  2. Add the Sardines: Add the drained sardines to the pan, breaking them apart gently with a spoon or fork. Cook for 2-3 minutes, allowing the sardines to absorb the garlic and olive oil, infusing the dish with flavor.

  3. Season the Sauce: Stir in the red pepper flakes, dried oregano, salt, and black pepper. Let the sardine mixture cook for another 2 minutes, allowing the flavors to meld together.

  4. Add Pasta Water: Add a few tablespoons of the reserved pasta water to the pan. This will help create a sauce that coats the pasta and prevent it from being too dry. Stir gently to combine.

Combine Pasta and Sauce:

  1. Mix Pasta with Sardine Sauce: Add the drained pasta directly to the pan with the sardine sauce. Toss the pasta in the sauce, ensuring that the noodles are evenly coated. If the mixture feels too dry, add more pasta water, a tablespoon at a time, until you achieve a silky sauce consistency.

  2. Add Lemon and Capers: Stir in the lemon zest and juice, along with the chopped capers (if using). The lemon will brighten the dish and add a refreshing tang, while the capers bring a salty, briny flavor that enhances the sardines.

Garnish and Serve:

  1. Garnish and Serve: Once everything is mixed well, transfer the pasta to serving bowls. Garnish with freshly chopped parsley and a sprinkle of Parmesan cheese (if desired). Serve immediately while the dish is warm.
