Char Siu Chicken: A Sweet and Savory Delight

  • Author: Miya
  • Total Time: 1 hour 50 minutes

Ingredients

Scale

For Chicken:

  • 4 boneless, skinless chicken thighs: Chicken thighs are perfect for this recipe as they remain tender and juicy when cooked, and the dark meat absorbs the marinade beautifully.
  • 1 tablespoon vegetable oil: For searing the chicken and getting a nice golden color before glazing.

The Char Siu Marinade:

  • 3 tablespoons hoisin sauce: A thick, sweet-salty sauce that adds depth and flavor.
  • 2 tablespoons soy sauce: For that savory, umami punch.
  • 2 tablespoons honey: To give the chicken a glossy, sweet glaze.
  • 1 tablespoon Chinese rice wine or dry sherry: Adds a subtle depth of flavor.
  • 1 teaspoon Chinese five-spice powder: This spice blend includes star anise, cloves, Chinese cinnamon, Sichuan peppercorns, and fennel seeds, providing a distinctive, aromatic flavor.
  • 2 cloves garlic, minced: Garlic adds a savory, aromatic note to the marinade.
  • 1 tablespoon grated fresh ginger: Ginger enhances the depth of flavor, offering a bit of spice and warmth.
  • 1 tablespoon rice vinegar: To balance out the sweetness and add a slight tang.
  • 1 teaspoon sesame oil: Adds a nutty aroma that complements the other ingredients.

Optional Garnishes for Char Siu Chicken:

  • Chopped green onions or cilantro: For a fresh burst of flavor and color.
  • Sesame seeds: For an extra crunch and garnish.

Instructions

First Step: PREPARE THE CHICKEN

  1. Trim the Chicken: Start by trimming any excess fat from the chicken thighs and pat them dry with paper towels. This helps the marinade adhere better and ensures the chicken cooks evenly.
  2. Sear the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs. Sear them for about 3-4 minutes per side until they are golden brown. You don’t need to cook them through at this point, as they will finish cooking in the oven later.
  3. Set Aside: Once the chicken is seared, remove it from the skillet and set it aside to cool slightly while you prepare the marinade.

Second Step: MAKE THE CHAR SIU MARINADE

  1. Combine the Ingredients: In a small bowl, whisk together the hoisin sauce, soy sauce, honey, Chinese rice wine (or dry sherry), five-spice powder, minced garlic, grated ginger, rice vinegar, and sesame oil. Make sure the marinade is well combined and smooth.
  2. Taste and Adjust: Taste the marinade and adjust the seasoning to your liking. You can add a little more honey if you like it sweeter, or a bit more soy sauce for a saltier kick.

Third Step: MARINATE THE CHICKEN

  1. Marinate the Chicken: Place the seared chicken thighs in a shallow dish or a large resealable plastic bag. Pour the marinade over the chicken, making sure all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for a deeper flavor.
  2. Marinade Tip: The longer the chicken marinates, the more flavorful it will be. However, even a short 1-hour marinade will still yield a delicious result.

Fourth Step: COOK THE CHICKEN

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). This high heat will help caramelize the glaze and give the chicken a nice crispy finish.
  2. Bake the Chicken: Place the marinated chicken thighs on a baking sheet lined with parchment paper or a silicone mat for easy cleanup. Roast the chicken in the preheated oven for about 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
  3. Glaze the Chicken: During the last 5 minutes of baking, baste the chicken with some of the leftover marinade to create a thick, caramelized layer of glaze. Repeat once or twice for a glossy, sticky finish.

Final Step: GARNISH AND SERVE THE CHAR SIU CHICKEN

  1. Garnish: Once the chicken is cooked through and has a beautiful, caramelized finish, remove it from the oven. Let it rest for a few minutes before slicing. Garnish with chopped green onions or cilantro and a sprinkle of sesame seeds if desired.
  2. Serve: Serve the Char Siu Chicken over steamed rice, stir-fried vegetables, or noodles for a complete meal. Alternatively, slice it up for use in wraps or sandwiches.
